Low FODMAP Pumpkin Spice Protein Overnight Oats

Cosy, spiced and gut-friendly — these low FODMAP pumpkin spice protein overnight oats are the perfect autumn breakfast. Make them the night before and wake up to creamy, protein-packed oats.

Ingredients (serves 2)

  • 80g rolled oats
  • 1 serving Perfectly Pure Plant Powered Porridge
  • 240ml low FODMAP plant milk (almond or oat)
  • 75g canned pumpkin purée (a low FODMAP portion)
  • 1 tsp pumpkin spice mix
  • 1 tbsp maple syrup
  • 1 tbsp chia seeds

Method

  1. Stir all the ingredients together in a bowl or jar.
  2. Cover and chill overnight (at least 6 hours).
  3. In the morning, give it a stir, add a splash more milk if needed, and top with a sprinkle of cinnamon.

Tip: keep the pumpkin to around 75g per serving to stay low FODMAP.
