Three ingredients, no cooking, and a freezer — that's all it takes for this peanut butter protein fudge. It's rich, melt-in-the-mouth and secretly high in plant protein, with none of the dairy, refined sugar or gut-unfriendly extras you'll find in shop-bought fudge.

Why freezer fudge works
Coconut oil sets solid when cold, so this fudge firms up in the freezer with no baking and no faff. Keep it in the freezer and grab a square whenever you need a gut-friendly sweet hit. Peanut butter is low FODMAP at around 1 tbsp, so portioning into small squares keeps everything gentle.
Ingredients (makes 16 squares)
- 150g smooth peanut butter (100% peanuts)
- 1 serving Nutty Nutty Peanut Butter Super Protein
- 3 tbsp melted coconut oil
- 2 tbsp maple syrup
- Pinch of flaky sea salt
Method
- Stir the peanut butter, Nutty Nutty, melted coconut oil and maple syrup together until thick and smooth.
- Spread into a small lined tin and smooth the top.
- Sprinkle with sea salt and freeze for at least 2 hours.
- Slice into 16 squares and keep frozen.
Swaps & storage
For a chocolate layer, melt a little dairy-free dark chocolate over the top before freezing, or use Blissful Brown Rice & Raw Cacao (FODMAP Friendly certified) for a chocolate fudge. Keep frozen for up to 2 months; let squares sit for a minute before eating.
