Pumpkin and Chia Seed Super Protein Muffins


 Try this delicious recipe for guilt free muffins. Preparation time is only around 25 minutes with a cooking time of 15 -25 minutes. Consumption time is usually only a few seconds, so you might want to double up on the ingredients!

 

INGREDIENTS ( Makes 12 muffins.)

200ml almond milk

200g gluten free oats

1 egg (or 1/4 cup mashed banana)

120g coconut oil 

240 g almonds meal 

100g grated carrots 

1 ripe banana 

6 dates, chopped 

1 teaspoon baking soda 

1/2 teaspoon salt 

1 teaspoon cinnamon

 

Preheat oven to 220 degrees C. Grease 12 muffin cups or line with paper muffin liners. In a small bowl, combine milk and oats and soak for 15 minutes. In a separate bowl, beat together egg and oil. Stir in oatmeal and Pumpkin & Chia Seed protein powder. In a third bowl, sift together almond, cinnamon, dates, baking soda and salt. Stir last mixture into wet ingredients, just until combined. Spoon batter into prepared muffin cups until cups are two thirds full. Bake in preheated oven for 15 to 25 minutes or until a toothpick inserted in centre of muffin comes out clean. Serve with coconut cream, whipped.
