Low FODMAP Chocolate Chip Protein Cookies

Cookies rarely make anyone's low FODMAP list, which is exactly why we wanted these to actually work — soft, chewy, and genuinely gut-friendly rather than a sad substitute.

Ingredients (makes 10)

Method

  1. Preheat the oven to 180°C and line a baking tray.
  2. Mix the protein powder, oat flour and baking powder in a bowl.
  3. Stir in the peanut butter, maple syrup and plant milk until a soft dough forms, then fold through the chocolate chips.
  4. Roll into 10 balls, flatten slightly on the tray, and bake for 10-12 minutes until just set.
  5. Cool on the tray for 5 minutes before moving — they firm up as they cool.
