Cookies rarely make anyone's low FODMAP list, which is exactly why we wanted these to actually work — soft, chewy, and genuinely gut-friendly rather than a sad substitute.
Ingredients (makes 10)
- 2 scoops Blissful Raw Cacao or Perfectly Pure Super Protein
- 120g gluten-free oat flour
- ½ tsp baking powder
- 60g smooth peanut butter
- 3 tbsp maple syrup
- 2 tbsp low FODMAP plant milk
- 40g dark chocolate chips
Method
- Preheat the oven to 180°C and line a baking tray.
- Mix the protein powder, oat flour and baking powder in a bowl.
- Stir in the peanut butter, maple syrup and plant milk until a soft dough forms, then fold through the chocolate chips.
- Roll into 10 balls, flatten slightly on the tray, and bake for 10-12 minutes until just set.
- Cool on the tray for 5 minutes before moving — they firm up as they cool.
