These low FODMAP protein brownies change all of that. They're fudgy in the middle, slightly crisp on the edges, and genuinely indulgent.

Ingredients
- 3 tbsp (30g) That Protein Blissful Brown Rice & Raw Cacao protein powder
- 100g oat flour
- 2 tbsp raw cacao powder
- 1 tsp baking powder
- Pinch of sea salt
- 2 flax eggs (2 tbsp ground flaxseed + 6 tbsp water — rest 10 minutes)
- 80ml maple syrup
- 60ml melted coconut oil
- 60ml unsweetened almond milk
- 1 tsp vanilla extract
- 60g dairy-free dark chocolate chips
Method
- Preheat oven to 175°C. Line a 20cm square tin with baking paper.
- Prepare flax eggs: mix 2 tbsp ground flaxseed with 6 tbsp water, set aside 10 minutes.
- Mix dry ingredients: oat flour, protein powder, cacao powder, baking powder, sea salt.
- Whisk together flax eggs, maple syrup, coconut oil, almond milk, and vanilla.
- Combine wet and dry, fold in most of the chocolate chips. Save some for the top.
- Pour into tin, top with remaining chips. Bake 20–22 minutes until edges are set.
- Cool completely before slicing.
Tips
- Refrigerate overnight before slicing for ultra-fudgy texture.
- Add 2 tbsp peanut butter to the batter for a PB chocolate version.
- Freeze individual squares for up to 2 months.
