High Protein Vegan Energy Balls — Low FODMAP Snack for Active People

Ingredients

  • 2 scoops That Protein Nutty Nutty Peanut Butter
  • 150g rolled oats
  • 3 tbsp smooth peanut butter
  • 2 tbsp maple syrup
  • 1 tbsp coconut oil, melted
  • 1 tbsp cacao nibs
  • Pinch of sea salt

Instructions

  1. Mix all ingredients in a large bowl until a thick dough forms.
  2. If too dry add a splash of oat milk. If too wet add more oats.
  3. Roll into 16 balls and place on a lined tray.
  4. Refrigerate 30 minutes until firm. Store in fridge up to 1 week.
