Raspberry & Pumpkin Chia Pudding

Serves 3 

Ingredients

 Chia pudding

2 tbsp. chia seeds

1 tsp. vanilla extract

300ml oat milk

Yoghurt layer

6 tbsp. vanilla coconut yogurt

Smoothie layer

100g frozen raspberries

1 banana

Splash of oat milk

2 tbsp. I Heart Pumpkin and Chia Super Protein

Topping

Pumpkin seeds

Fresh raspberries

 Method

The night before - add the chia seeds to a bowl, pour over the oat milk and vanilla extract and stir thoroughly together making sure there are no lumps. Cover and leave overnight in the fridge. The mixture will thicken.

In the morning add all the smoothie ingredients to a blender and blend until smooth and creamy.

Stir the chia pudding and then spoon between two glasses, add a layer of yoghurt then pour over the smoothie and scatter with raspberries and pumpkin seeds. Serve.
