100 g baked pumpkin
200 ml plant milk
2 tbsp apple cider vinegar 
200 ml water
2 tbsp maple syrup
2 tbsp tahini
200 g spelt flour
4 tbsp pumpkin protein powder
2 tsp pumpkin spice
2 tsp baking powder 
pinch of salt


In a small bowl combine milk with apple cider vinegar to create buttermilk. I’m using soy milk as it works the best. Blend together pumpkin, buttermilk, maple syrup and tahini. In another bowl add all dry ingredients: flour, Pumpkin, and chia seeds That Protein super protein powder, pumpkin spice, baking powder, and salt. Pour the pumpkin mixture, add water, and combine it together. Set aside for 10 minutes to thicken the dough. Heat the waffle iron, spread the dough, and bake the waffles according to the waffle iron instructions. I always bake mine for 6 minutes. The waffles are perfectly crispy on the outside and soft inside.

Tip - if you want to reheat your waffles I recommend doing it in the waffle maker to get back this crispiness.
