For those times when you want a healthy high protein, low GI, sweetened, high fibre treat.
70g desiccated coconut
1 teaspoon vanilla extract
1 ablespoon agave
3½ tablespoon coconut oil, melted
For the chocolate:
100g coconut cream sachets (warm the sachet in hot water until melted)
2 tablespoons coconut oil, melted
50g that protein Blissful Brown Rice and Raw Cacao Super Protein
1 tablespoon cacao
1½ tablespoon agave
½ teaspoon vanilla
Line a loaf tin with baking paper. Mix together the filling ingredients until well combined. Press the coconut mixture into the loaf tin - if the mixture feels a little dry, add a touch of coconut milk or oil. If too wet - add a touch of coconut. Smooth over the top with the back of a spoon, then place in the freezer overnight.
Remove from the freezer and cut into bars. Set aside.
Next, prepare the chocolate coating by stirring together all ingredients until smooth. Dunk your bars in the chocolate, then allow to set on baking paper before enjoying.
Store in the fridge.
