These Low FODMAP Vegan Protein Cookies are a soft, satisfying treat packed with clean plant protein and gentle ingredients. Made with That Protein Blissful Brown Rice & Raw Cacao, they deliver rich chocolate flavour while staying gut-friendly.

INGREDIENTS

• 1 scoop That Protein Blissful Brown Rice & Raw Cacao
• ½ cup gluten-free oat flour
• 2 tbsp peanut butter
• 2 tbsp maple syrup
• 2 tbsp almond milk
• 1 tbsp chia seeds
• ½ tsp baking powder
• pinch of sea salt
• 1 tbsp dairy-free dark chocolate chips (optional)

INSTRUCTIONS

  1. Preheat oven to 180°C (350°F) and line a baking tray with parchment paper.

  2. In a bowl, mix That Protein Blissful Brown Rice & Raw Cacao, oat flour, chia seeds, baking powder, and salt.

  3. Add peanut butter, maple syrup, and almond milk. Stir until a thick cookie dough forms. Fold in chocolate chips if using.

  4. Scoop dough onto the tray, flatten slightly, and bake for 10–12 minutes until lightly golden. Let cool before serving.
