Chocolate Mousse Layer

1 block (350g) silken tofu (for creaminess!)

½ cup melted dark chocolate

3 tbsp maple syrup

1 tsp vanilla extract
Glossy Ganache Topping

100g dark chocolate, chopped

3 tbsp coconut cream

1 tbsp maple syrup
Method

Make the sponge base: Preheat oven to 180°C. Mix oat flour, cocoa, protein, and baking powder. Stir in almond milk, maple syrup, and coconut oil until smooth. Bake in a lined 20cm springform tin for 12–15 minutes. Let cool.

Blend the mousse: In a blender, combine silken tofu, protein, cocoa, melted chocolate, maple syrup, and vanilla until silky smooth. Pour over cooled sponge and smooth out. Chill for 2 hours.

Finish with ganache: Heat coconut cream until just steaming, pour over dark chocolate, stir until glossy. Spread on top of mousse. Chill again until set.

Serve with flair: Dust with cacao powder and shards of dark chocolate.
